The maripa (Attalea regia) is a palm that can grow 25 to 30 metres tall. Its ripe fruits are eaten, and oil is made from the kernel of the nuts. The Maroons call this oil Maipa Sii Fatu. Maroons and Indigenous peoples have made maripa oil by hand for centuries. It gives fish and meat dishes a full, distinctive flavour and is a staple of Maroon cooking. Beyond the kitchen, Maroon women have traditionally also used the oil in caring for their skin and hair. The oil consists mainly of saturated fatty acids such as lauric and myristic acid, and it sets at cooler temperatures.
Use and preparation
